Ingredients
- 1 ripe mango, peeled and diced
- 500 ml thick natural yoghurt
- 200 g mixed berries
- 1 orange, zest and juice
- 1 tablespoon icing sugar, plus a little extra for serving
- 1 small handful fresh basil leaves, torn or finely sliced
Method
- Place the mixed berries in a bowl.
- Add the icing sugar, finely grated orange zest, a little orange juice and the fresh basil.
- Mix gently and leave the berries to macerate while preparing the mango.
- Place the diced mango in a small saucepan.
- Cook over low to medium heat until the mango softens and can be mashed into a thick purée.
- Allow the mango purée to cool.
- Spoon a layer of mango purée into the base of each of four serving glasses.
- Add a layer of thick natural yoghurt.
- Continue alternating mango purée and yoghurt until the glasses are filled.
- Top each sundae with the macerated berries and a light dusting of icing sugar.
- Refrigerate until chilled before serving.
