Peach Jam and Almond Cookies

Ingredients

• 100 g butter, softened
• 70 g icing sugar
• 3 tbsp neutral oil
• 1 egg
• 8 g vanilla sugar
• 2 g baking powder
• 200 g plain flour
• 150 g roasted almonds, finely ground
• 2 tsp ground cinnamon
• 4 tbsp peach jam

Method

1. Preheat the oven to 180°C (350°F).
2. Line a baking tray with baking paper.
3. Beat the softened butter and icing sugar until creamy.
4. Add the oil, egg and vanilla sugar.
5. Mix until smooth.
6. Combine the baking powder, flour, ground almonds and cinnamon.
7. Add the dry ingredients gradually to the butter mixture.
8. Mix until a soft dough forms.
9. Divide the dough into approximately 20 portions.
10. Roll each portion into a ball.
11. Place the balls on the prepared tray.
12. Make a small indentation in the centre of each cookie.
13. Fill each indentation with a little peach jam.
14. Bake for approximately 20 minutes.
15. Leave to cool on the tray for 5 minutes.
16. Transfer to a wire rack and cool completely.
