No-Bake Orange Cheesecake

Ingredients

• 200 g Savoiardi biscuits
• 300 ml milk
• 3 oranges
• 50 g sugar
• 50 g cornflour
• Finely grated zest of 1 orange
• 300 ml double cream
• 80 g condensed milk
• 300 g soft cream cheese

Method

1. Break the Savoiardi biscuits into pieces.
2. Line or lightly grease a suitable cake tin or serving dish.
3. Reserve a small amount of the milk.
4. Heat the remaining milk with the sugar.
5. Whisk the cornflour into the reserved cold milk.
6. Gradually whisk the cornflour mixture into the warm milk.
7. Cook while stirring continuously until thickened.
8. Remove from the heat and leave to cool.
9. Finely grate the zest from one orange.
10. Juice the oranges and strain out any seeds.
11. Beat the cream cheese with the condensed milk until smooth.
12. Whip the cream until softly thickened.
13. Fold the whipped cream into the cream-cheese mixture.
14. Add the cooled milk mixture.
15. Fold in the orange zest and juice gradually.
16. Arrange the Savoiardi pieces in the prepared dish.
17. Spoon the orange cheesecake mixture over the biscuits.
18. Smooth the top.
19. Cover and refrigerate for at least 4 hours.
20. Serve chilled.
