- 1.5 cups graham cracker crumbs
- 1/3 cup packed brown sugar
- 1/2 teaspoon ground cinnamon
- 1/3 cup melted butter
- enough lemon to make 2 teaspoons lemon juice
- 2 8-ounce packages of softened cream cheese
- 1 pint heavy whipping cream
- 1/3 cup sugar
- 21-ounce can cherry pie filling
Method
- Combine 1.5 cups graham cracker crumbs, 1/3 cup packed brown sugar, and 1/2 teaspoon ground cinnamon in a small bowl. Stir together.
- Add 1/3 cup melted butter to the graham cracker mixture and stir well.
- Press the crust mixture into the bottom of an 8 or 10-inch springform pan. Chill in the refrigerator until firm.
- Squeeze enough lemon to make 2 teaspoons of lemon juice. Pour into a bowl with 2 packages of softened cream cheese. Beat until soft.
- Pour in 1 pint of heavy whipping cream and beat with an electric mixer until thick.
- Add 1/3 cup sugar and continue beating until the mixture is thick.
- Pour the batter into the chilled crust.
- Top with a 21-ounce can of cherry pie filling.
- Chill the cheesecake in the refrigerator for several hours or overnight.
- Just before serving, remove the sides of the springform pan and place the cheesecake on a platter or cake stand.
