  • 1.5 cups graham cracker crumbs
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup melted butter
  • enough lemon to make 2 teaspoons lemon juice
  • 2 8-ounce packages of softened cream cheese
  • 1 pint heavy whipping cream
  • 1/3 cup sugar
  • 21-ounce can cherry pie filling

Method

10 steps
  1. Combine 1.5 cups graham cracker crumbs, 1/3 cup packed brown sugar, and 1/2 teaspoon ground cinnamon in a small bowl. Stir together.
  2. Add 1/3 cup melted butter to the graham cracker mixture and stir well.
  3. Press the crust mixture into the bottom of an 8 or 10-inch springform pan. Chill in the refrigerator until firm.
  4. Squeeze enough lemon to make 2 teaspoons of lemon juice. Pour into a bowl with 2 packages of softened cream cheese. Beat until soft.
  5. Pour in 1 pint of heavy whipping cream and beat with an electric mixer until thick.
  6. Add 1/3 cup sugar and continue beating until the mixture is thick.
  7. Pour the batter into the chilled crust.
  8. Top with a 21-ounce can of cherry pie filling.
  9. Chill the cheesecake in the refrigerator for several hours or overnight.
  10. Just before serving, remove the sides of the springform pan and place the cheesecake on a platter or cake stand.
