- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup shredded mozzarella
- 1 cup shredded rotisserie chicken (optional)
- 1/2 cup cherry tomatoes, halved
- Fresh basil leaves
- Salt to taste
- Pepper to taste
Method
- Preheat oven to 375°F (190°C).
- Combine rice and broth in an oven-safe dish.
- Add salt and pepper to taste.
- Cover dish tightly with foil.
- Bake for 40 minutes until rice is tender.
- Remove from oven and stir in shredded mozzarella and chicken if using.
- Top with cherry tomatoes and fresh basil.
- Serve warm.
