- 1 cup Arborio rice
- 4 cups chicken or vegetable broth
- 1/2 cup shredded mozzarella
- 1 cup shredded rotisserie chicken (optional)
- 1/2 cup cherry tomatoes, halved
- Fresh basil leaves
- Salt to taste
- Pepper to taste
Method

Preheat oven to 375°F (190°C).

Combine rice and broth in an oven-safe dish.

Add salt and pepper to taste.

Cover dish tightly with foil.

Bake for 40 minutes until rice is tender.

Remove from oven and stir in shredded mozzarella and chicken if using.

Top with cherry tomatoes and fresh basil.
