- 4 cloves garlic
- 8 oz baby bella mushrooms
- 2 Tbsp butter
- 1/8 tsp salt
- 1/8 tsp freshly cracked pepper
- 8 oz fettuccine
- 2.5 cups vegetable broth
- 1/3 cup heavy cream
- 1/4 cup grated Parmesan
Method
- Mince the garlic and slice the mushrooms.
- Sauté garlic in butter over medium heat for one minute.
- Add mushrooms, salt, and pepper; sauté until mushrooms soften and brown.
- Add fettuccine and vegetable broth; stir to combine.
- Cover and bring broth to a boil over medium-high heat.
- Stir pasta, cover, and reduce heat to medium-low; simmer for 10 minutes, stirring occasionally.
- Add heavy cream and stir to combine.
- Turn off heat, add Parmesan, and stir until melted.
- Taste and adjust salt or pepper if needed.
- Serve immediately.
