Ingredients

  • 4 cloves garlic
  • 8 oz baby bella mushrooms
  • 2 Tbsp butter
  • 1/8 tsp salt
  • 1/8 tsp freshly cracked pepper
  • 8 oz fettuccine
  • 2.5 cups vegetable broth
  • 1/3 cup heavy cream
  • 1/4 cup grated Parmesan

Method

  1. 1

    Mince the garlic and slice the mushrooms.

    Sauté garlic in butter over medium heat for one minute.

  3. 3

    Add mushrooms, salt, and pepper; sauté until mushrooms soften and brown.

    Add fettuccine and vegetable broth; stir to combine.

    Cover and bring broth to a boil over medium-high heat.

    Stir pasta, cover, and reduce heat to medium-low; simmer for 10 minutes, stirring occasionally.

    Add heavy cream and stir to combine.

    Turn off heat, add Parmesan, and stir until melted.

    Taste and adjust salt or pepper if needed.
