Ingredients
- 4 Eggs
- a pinch of salt
- 10 g Vanilla sugar
- 130 g Sugar
- Zest of 1 Orange
- 90 g Orange juice
- 30 ml Vegetable oil
- 160 g Flour
- 30 g Starch
- 7 g Baking powder
- Zest of 2 Oranges
- Juice of 3 Oranges (~250 ml)
- 120 g Sugar
- 35 g Cornstarch
- 200 ml cold water
- 1 can of mandarins
- 250 g Butter at room temperature
Method
- Separate the eggs and add the orange juice to the egg yolks.
- Beat the egg yolks with vanilla sugar and sugar until frothy.
- Add vegetable oil, orange zest, flour, starch, and baking powder and mix everything.
- Beat the egg whites with a pinch of salt until stiff and fold it into the batter.
- Bake the sponge cake until it is golden brown and cooked through.
- For the cream, mix orange zest, orange juice, sugar, cornstarch, and cold water in a pot.
- Heat the mixture while stirring until it thickens.
- Let the cream cool and stir in the soft butter.
- Add the mandarins to the cream and mix everything well.
- Spread the cream over the cooled sponge cake.
