Method
- Heat a hot pan and add shallots, tofu, pickled radish, and dried shrimp.
- Add prawn fat sauce to the pan for umami flavor.
- Add rice noodles and a bit of water.
- Pour in tamarind, palm sugar, fish sauce, and chilies to make the pad thai sauce.
- Add chives and bean sprouts.
- Cook until the color is nice and the ingredients are well combined.
- Finish with concentrated prawn fat to enhance flavor.
- Turn off the gas and add one or two eggs, cooking until the eggs are still runny and sauce-like.
