  • tofu
  • pickled radish
  • chai
  • peanuts
  • pickled chilies
  • shallots
  • dried shrimp
  • tamarind
  • palm sugar
  • fish sauce
  • chilies
  • prawn fat (prawn head extract)
  • rice noodles
  • water
  • eggs
  • chives
  • bean sprouts

Method

  1. Heat a hot pan and add shallots, tofu, pickled radish, and dried shrimp.
  2. Add prawn fat sauce to the pan for umami flavor.
  3. Add rice noodles and a bit of water.
  4. Pour in tamarind, palm sugar, fish sauce, and chilies to make the pad thai sauce.
  5. Add chives and bean sprouts.
  6. Cook until the color is nice and the ingredients are well combined.
  7. Finish with concentrated prawn fat to enhance flavor.
  8. Turn off the gas and add one or two eggs, cooking until the eggs are still runny and sauce-like.
