  • 494 g fish fillet
  • 1/2 tsp salt
  • 1/8 tsp white pepper, for the fish
  • 4 tsp cornstarch, for coating
  • 13 g ginger
  • 4 green onions
  • 4 tsp soy sauce
  • 1/2 tsp sugar
  • 1/8 tsp white pepper, for the sauce
  • 1/2 tsp sesame oil
  • 1/2 cup water
  • 3/4 tsp cornstarch, for the sauce
  • Cooking oil, as needed

Method

  1. Pat the fish dry on both sides and season with salt and white pepper powder. Let it season for about 15 minutes.
  2. Prepare four thin slices of ginger and cut four more into fine strips. Prepare four green onions: cut the stem part into 2-inch sections and the leafy part into strips.
  3. Mix cornstarch with cold water until dissolved to make a water slurry.
  4. Sprinkle some cornstarch on the seasoned fish and spread evenly.
  5. Heat oil in a pan over medium-high heat. Add ginger slices and green onion stem parts; cook for about 15 seconds.
  6. Add the fish fillet to the pan and pan fry for 4 minutes on each side without moving it, swirling the pan occasionally.
  7. Remove the fish once both sides are cooked and drain excess oil.
  8. In a separate pan, heat oil over medium heat. Add ginger strips and sizzle for 10 seconds.
  9. Turn off heat, add green onion strips, and toss in the oil.
  10. Reduce heat to low, add soy sauce and sugar, and bring to a boil.
  11. Add white pepper powder and cornstarch slurry, stir, and bring to a boil again.
  12. Finish by adding sesame oil, then pour the sauce over the fish to serve.
