  • 4 eggs
  • 2 egg yolks
  • A pinch of salt
  • 150 g sugar
  • 70 ml vegetable oil
  • 10 g vanilla sugar
  • Zest of 1 lemon
  • 250 g wheat flour
  • 10 g baking powder
  • 3 ripe pears
  • ½ tsp cinnamon
  • A pinch of nutmeg
  • 30 ml corn syrup (or honey)
  • 2 egg whites
  • 1 tsp lemon juice
  • 80 g powdered sugar
  • 400 g sour cream or plain yogurt
  • 2 tbsp starch
  • 70 g brown sugar
  • 70 g butter
  • 4 tbsp flour

Method

11 steps
  1. Beat the eggs. Combine 4 eggs, 2 yolks, and a pinch of salt.
  2. Add sugar. Pour in 150 g sugar and beat until fluffy.
  3. Mix in wet ingredients. Add oil, vanilla sugar, and lemon zest.
  4. Add dry ingredients. Combine with flour and baking powder; mix until smooth.
  5. Prepare the pears. Slice the pears, then mix with nutmeg, cinnamon, and syrup.
  6. Pour batter. Spread the dough into a baking dish (20×30 cm).
  7. Add fruit. Lay pear slices evenly over the dough.
  8. Make the cream. Beat the egg whites with salt and lemon juice, add powdered sugar, then gently fold in sour cream and starch.
  9. Pour over pears. Spread the cream smoothly with a spatula.
  10. Prepare streusel. Mix brown sugar, butter, and flour until crumbly, then sprinkle over the top.
  11. Bake. Place in a preheated oven (180–200 °C) for 40 minutes until golden.
