  • 200 g shelled pistachios
  • 150 g dates
  • a pinch of salt
  • white chocolate or dairyfree white chocolate or white chocolate candy melts
  • dried blueberries
  • food coloring

Method

8 steps
  1. Add pistachios, dates, and salt to a food processor and pulse until mixture forms a large truffle ball, adding soaking water if dates are hard.
  2. Use a 2 teaspoon cookie scoop to portion out the mixture and roll into balls.
  3. Melt white chocolate in the microwave or double boiler.
  4. Coat each truffle ball completely in melted white chocolate using utensils.
  5. Transfer coated truffles to a parchment-lined baking sheet.
  6. Place a dried blueberry on top of each coated truffle to create the pupil.
  7. Use a toothpick dipped in food coloring to draw squiggly veins on the white chocolate surface to resemble eyeballs.
  8. Allow the food coloring to set before serving.
