Pistachio Eyeball Truffles
A spooky Halloween treat made with pistachios, dates, white chocolate, blueberries, and food coloring, decorated to look like eyeballs.

Ingredients
- 200 g shelled pistachios
- 150 g dates
- a pinch of salt
- white chocolate or dairyfree white chocolate or white chocolate candy melts
- dried blueberries
- food coloring
Method
- Add pistachios, dates, and salt to a food processor and pulse until mixture forms a large truffle ball, adding soaking water if dates are hard.
- Use a 2 teaspoon cookie scoop to portion out the mixture and roll into balls.
- Melt white chocolate in the microwave or double boiler.
- Coat each truffle ball completely in melted white chocolate using utensils.
- Transfer coated truffles to a parchment-lined baking sheet.
- Place a dried blueberry on top of each coated truffle to create the pupil.
- Use a toothpick dipped in food coloring to draw squiggly veins on the white chocolate surface to resemble eyeballs.
- Allow the food coloring to set before serving.
