Ingredients
- 1 cup (135 g) shelled pistachios
- 1/2 cup packed pitted dates (about 12–13 small dates)
- 1/8 teaspoon salt
- 3 ounces (85 g) white chocolate or white candy melts
- 16 dried blueberries, for decorating
- Red food colouring, for decorating
Method
- If the dates are firm, soak them until softened, then drain.
- Process the pistachios, dates and salt until the mixture sticks together, scraping down the bowl as needed.
- Roll into 16 small balls.
- Melt the white chocolate gently, stirring frequently. Dip the balls and place on parchment.
- Press a flattened dried blueberry onto each truffle for a pupil. Draw red veins with a toothpick dipped in food colouring.
- Refrigerate until the coating is set.
