  • 3 large eggs
  • Pinch of salt
  • 100 g sugar
  • 1 tsp vanilla extract
  • 200 g plain yogurt
  • 80 g butter, melted
  • 200 g all-purpose flour
  • 10 g baking powder
  • Vegetable oil, for greasing the pan
  • 300 g well-drained cottage cheese
  • 1 egg
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 500 g fresh plums, halved and pitted
  • 2 tbsp sugar, for topping
  • 1 tbsp butter, melted, for topping

Method

10 steps
  1. Preheat the oven to 180°C (356°F). Lightly grease a baking pan; line the base with parchment if desired.
  2. Beat the 3 eggs with a pinch of salt until combined. Add the 100 g sugar and vanilla extract, then beat until slightly pale and thickened.
  3. Mix in the yogurt and melted butter.
  4. In a separate bowl, whisk together the flour and baking powder. Fold into the wet mixture just until no dry flour remains.
  5. Spread the batter evenly in the prepared pan.
  6. Blend the cottage cheese and 1 egg until smooth. Mix in 2 tbsp sugar and the cornstarch.
  7. Spread the cottage cheese mixture evenly over the batter.
  8. Arrange the halved, pitted plums over the cheese layer. Sprinkle with 2 tbsp sugar and drizzle with 1 tbsp melted butter.
  9. Bake at 180°C (356°F) for 50–55 minutes, until the top is golden and a skewer inserted into the cake portion comes out clean.
  10. Cool in the pan before slicing and serving.
