  • 4 large King Edward potatoes
  • Maldon sea salt
  • salted French butter, diced
  • double cream
  • 3 egg yolks
  • Nutmeg
  • Black pepper
  • french salted butter
  • 3 cloves garlic, microplaned
  • flat leaf parsley, chopped
  • Salt and pepper

Method

8 steps
  1. Bake potatoes at 180–190°C on a salted tray until completely tender.
  2. Halve potatoes while hot and pass through a fine sieve or tamis.
  3. Add warm butter, cream, egg yolks, nutmeg, and black pepper to the pass-through potatoes. Whisk until smooth and fully combined.
  4. Transfer the mixture to a piping bag fitted with a star nozzle.
  5. Pipe into small mounds onto a Silpat-lined tray.
  6. Bake at 190°C for approximately 10-12 minutes, until crisp and golden.
  7. Whisk together melted salted French butter, garlic, chopped parsley, salt, and pepper to make garlic butter.
  8. Rewarm garlic butter and brush over the hot Duchesse potatoes immediately after baking.
