Potato Recipes for the Festive Table

Ingredients

• 1 kg Potatoes
• 3 tbsp Butter (2 for the dish, 1 melted for brushing)
• 5 pieces Eggs (1 white for crust, 4 for filling)

• 300 ml Cream
• 100 g Feta
• 50 g Parmesan
• 100 g Spinach
• 1 piece Red bell pepper
• 80 g Olives
• 2 tbsp Flour
• to taste Dried garlic
• to taste Oregano
• Olive oil (for frying)
• 6 pieces Potatoes (for the cutlets)
• 1/2 head Cabbage
• 2 pieces Onions
• 4 pieces Mushrooms
• 3 cloves Garlic
• 1 piece Carrot
• 1/2 cup Flour (for cutlets)
• 1 tbsp Butter (for cutlets)
• Olive oil
• Breadcrumbs
• 1 tsp Tomato paste
• Fresh herbs ((dill, parsley))
• Salt (to taste)
• Black pepper (to taste)
• Italian herbs (to taste)
• 1 piece Egg (for cutlets)
• Bay leaves
• Peppercorns

Method

1. For the golden potato casserole: Boil the potatoes, then mash and combine with butter, eggs, cream, feta, spinach, and seasoning. Layer with cheese and bake until golden.
2. For the stuffed potato cutlets: Boil and mash potatoes. Prepare cabbage and mushroom fillings by sautéing them separately with onions and seasonings.
3. Form the mashed potato mixture into cutlets, fill with cabbage or mushroom filling, and coat with flour and breadcrumbs before frying.
4. Serve all dishes together for a festive potato feast.
