  • 1 homemade or shop-bought 9-inch pie crust
  • 3/4 cup (165 g) packed light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 (15 oz / 425 g) can pumpkin purée
  • 1 (12 oz / 354 ml) can evaporated milk
  • 3 large eggs, at room temperature

Method

10 steps
  1. If using homemade pastry, roll it into a 14-inch circle. Line a 9-inch pie dish, trim and crimp the edges, then chill until needed.
  2. Position an oven rack in the bottom third of the oven and preheat to 400°F (200°C).
  3. Whisk the brown sugar, cinnamon, ginger, nutmeg, cloves and salt together in a large bowl.
  4. Add the pumpkin purée, evaporated milk and eggs. Whisk until completely smooth.
  5. Pour the filling into the prepared pie crust.
  6. Bake at 400°F (200°C) for 15 minutes.
  7. Reduce the oven temperature to 350°F (175°C) and bake for approximately 40 minutes longer.
  8. The pie is ready when the filling is puffed around the edges but still jiggles slightly in the centre.
  9. Transfer the pie to a wire rack and cool completely for at least 1 hour before slicing.
  10. Cover and refrigerate leftovers for up to 2 days.
