Jamie Oliver's NYC Cheesecake

Mix 350 g biscuits with 70 g dark chocolate in a blender.

Melt 225 g butter in a small pan and add to the blender with the biscuit mixture, then blend until combined.

Press the biscuit and chocolate mixture into a cake form to form the base.

In a bowl, beat 5 eggs and 150 g sugar with vanilla seeds until smooth.

Add the juice of 6 limes to the cream cheese and mix well.

Combine the cream cheese mixture with the egg and sugar mixture.

Pour the lime and cheese filling into the prepared base in the cake form.

Bake in a preheated oven at 160°C (310°F) for 40-50 minutes until lightly browned.

Prepare coconut meringue: beat 3 egg whites with a pinch of salt until fluffy.

Gradually add 110 g sugar and continue beating until stiff peaks form.

Mix in 40 g dried coconut.
