Ingredients

  • 350 g biscuits (cookies)
  • 70 g dark chocolate
  • 225 g butter
  • 900 g cream cheese
  • 5 eggs
  • 150 g sugar
  • Vanilla (from vanilla pod)
  • Juice of 6 limes
  • 110 g sugar (for meringue)
  • 3 egg whites
  • 40 g dried coconut

Method

  1. Mix 350 g biscuits with 70 g dark chocolate in a blender.
  2. Melt 225 g butter in a small pan and add to the blender with the biscuit mixture, then blend until combined.
  3. Press the biscuit and chocolate mixture into a cake form to form the base.
  4. In a bowl, beat 5 eggs and 150 g sugar with vanilla seeds until smooth.
  5. Add the juice of 6 limes to the cream cheese and mix well.
  6. Combine the cream cheese mixture with the egg and sugar mixture.
  7. Pour the lime and cheese filling into the prepared base in the cake form.
  8. Bake in a preheated oven at 160°C (310°F) for 40-50 minutes until lightly browned.
  9. Prepare coconut meringue: beat 3 egg whites with a pinch of salt until fluffy.
  10. Gradually add 110 g sugar and continue beating until stiff peaks form.
  11. Mix in 40 g dried coconut.
  12. Fill a piping bag with the meringue and pipe onto the baked cheesecake in star shapes.
  13. Bake the topped cheesecake at 220°C (425°F) for 4-5 minutes until lightly browned.
  14. Cool in the refrigerator for at least 45 minutes, ideally 3 hours.
  15. Slice and serve, optionally with sauce.

Helpful tips

  • Press the biscuit base firmly into the tin.
  • Bake the cheesecake only until lightly browned and just set.
  • Pipe the coconut meringue onto the cooled cheesecake before its brief final bake.

Storage

Keep the cheesecake covered in the refrigerator and serve chilled.
