  • 4 3/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 2 tablespoon baking soda
  • 3/4 teaspoon salt
  • 2 teaspoon cinnamon
  • 1 1/2 teaspoon powdered ginger
  • 3 sticks unsalted butter
  • 1 3/4 cups granulated sugar
  • 1 egg
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup dark molasses

Method

9 steps
  1. Sift together 4 3/4 cups all-purpose flour, 1/2 teaspoon baking powder, 2 tablespoon baking soda, 3/4 teaspoon salt, 2 teaspoon cinnamon, and 1 1/2 teaspoon powdered ginger.
  2. Cream together three sticks of unsalted butter and 1 3/4 cups granulated sugar until light and fluffy.
  3. Add one egg, beat, then add second egg and 1 teaspoon vanilla extract, mixing well.
  4. Add 1/2 cup dark molasses gradually into the mixture.
  5. Gradually add the sifted dry ingredients into the wet mixture, mixing until just combined.
  6. Divide the dough into four portions, roll each into a log, and chill until firm.
  7. Preheat oven to 350°F. Slice chilled dough into 3/8 inch slices.
  8. Bake on parchment-lined baking sheets for 12-15 minutes until golden.
  9. Cool cookies on a rack.
