- 4 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 2 tablespoon baking soda
- 3/4 teaspoon salt
- 2 teaspoon cinnamon
- 1 1/2 teaspoon powdered ginger
- 3 sticks unsalted butter
- 1 3/4 cups granulated sugar
- 1 egg
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 cup dark molasses
Method
- Sift together 4 3/4 cups all-purpose flour, 1/2 teaspoon baking powder, 2 tablespoon baking soda, 3/4 teaspoon salt, 2 teaspoon cinnamon, and 1 1/2 teaspoon powdered ginger.
- Cream together three sticks of unsalted butter and 1 3/4 cups granulated sugar until light and fluffy.
- Add one egg, beat, then add second egg and 1 teaspoon vanilla extract, mixing well.
- Add 1/2 cup dark molasses gradually into the mixture.
- Gradually add the sifted dry ingredients into the wet mixture, mixing until just combined.
- Divide the dough into four portions, roll each into a log, and chill until firm.
- Preheat oven to 350°F. Slice chilled dough into 3/8 inch slices.
- Bake on parchment-lined baking sheets for 12-15 minutes until golden.
- Cool cookies on a rack.
