- 4 3/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 2 tablespoons baking soda
- 3/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 1/2 teaspoons ground ginger
- 340 g unsalted butter (3 US sticks), at room temperature
- 1 3/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup dark molasses
Method
- Sift the flour, baking powder, baking soda, salt, cinnamon and ginger into a bowl.
- Beat the softened butter and sugar until light and fluffy, scraping down the bowl as needed.
- Beat in the two eggs one at a time, then mix in the vanilla.
- Mix in the molasses, then gradually add the dry ingredients. Stop mixing once the dough comes together.
- Divide the dough into four portions and roll into logs. Wrap and refrigerate until firm, allowing about 1–2 hours.
- Heat the oven to 350°F (175°C). Line baking sheets with parchment and cut the chilled logs into slices about 3/8 inch (1 cm) thick.
- Space the slices on the prepared sheets and bake for 12–15 minutes per tray, until the tops begin to crack and the edges are set.
- Let the cookies rest on the baking sheet for 2 minutes, then transfer to a rack to cool completely.
