Ingredients
- 1/2 cup uncooked quinoa
- 1 cup water
- 1 large sweet potato
- 1/2 small head broccoli
- 3 spring onions
- 30g fresh coriander
- 2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp chilli flakes
- black pepper & salt to taste
- 2-3 heaped tbsp chickpea flour
- olive oil
Method
- Cook the quinoa by boiling 1/2 cup of uncooked quinoa in 1 cup of water until tender.
- Cook the sweet potato until soft.
- Chop the broccoli, spring onions, and coriander.
- Mix cooked quinoa, mashed sweet potato, chopped broccoli, spring onions, coriander, paprika, garlic powder, chilli flakes, salt, and pepper in a bowl.
- Add 2-3 heaped tablespoons of chickpea flour to the mixture and combine until it holds together.
- Form the mixture into patties.
- Heat olive oil in a pan over medium heat.
- Cook the patties for several minutes on each side until golden brown.
