Quinoa Patties

Vegan gluten-free quinoa patties that are tender, easy to make, and melt in your mouth.
Ingredients
- 1/2 cup uncooked quinoa
- 1 cup water
- 1 large sweet potato
- 1/2 small head broccoli
- 3 spring onions
- 30g fresh coriander
- 2 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp chilli flakes
- black pepper & salt to taste
- 2-3 heaped tbsp chickpea flour
- olive oil
Method

Cook the quinoa by boiling 1/2 cup of uncooked quinoa in 1 cup of water until tender.

Cook the sweet potato until soft.

Chop the broccoli, spring onions, and coriander.

Mix cooked quinoa, mashed sweet potato, chopped broccoli, spring onions, coriander, paprika, garlic powder, chilli flakes, salt, and pepper in a bowl.

Add 2-3 heaped tablespoons of chickpea flour to the mixture and combine until it holds together.

Form the mixture into patties.

Heat olive oil in a pan over medium heat.

Cook the patties for several minutes on each side until golden brown.
