- 1 kilo desert potatoes
- half a cup vegetable oil
- 1.5 teaspoons salt
- optional: chopped fresh thyme or parsley
Method
- Preheat oven to 200°C (390°F) on fan-forced.
- Peel the potatoes and cut into quarters.
- Add potatoes to a large pot, cover with cold water, and bring to a boil.
- Reduce heat to medium and simmer for 9 minutes.
- Drain the potatoes in a colander and shake to fluff them up, leaving the outside almost mashed but intact.
- Add half a cup of vegetable oil to a roasting tray and heat in the oven for 10 minutes.
- Carefully transfer the fluffed potatoes into the hot oil, coating them evenly.
- Sprinkle 1.5 teaspoons of salt over the potatoes and gently mix to coat.
- Roast in the oven for 55 minutes to 1 hour, stirring every 15 minutes for even color and crispness.
- Remove from oven, transfer to a serving bowl, and optionally garnish with chopped thyme or parsley.
