Roast Potatoes


At a glance
Crispy and fluffy roast potatoes perfect for Christmas dinner or any meal.
Ingredients
- 1 kilo desert potatoes
- half a cup vegetable oil
- 1.5 teaspoons salt
- optional: chopped fresh thyme or parsley
Method

Preheat oven to 200°C (390°F) on fan-forced.

Peel the potatoes and cut into quarters.

Add potatoes to a large pot, cover with cold water, and bring to a boil.

Reduce heat to medium and simmer for 9 minutes.

Drain the potatoes in a colander and shake to fluff them up, leaving the outside almost mashed but intact.

Add half a cup of vegetable oil to a roasting tray and heat in the oven for 10 minutes.

Carefully transfer the fluffed potatoes into the hot oil, coating them evenly.

Sprinkle 1.5 teaspoons of salt over the potatoes and gently mix to coat.

Roast in the oven for 55 minutes to 1 hour, stirring every 15 minutes for even color and crispness.

Remove from oven, transfer to a serving bowl, and optionally garnish with chopped thyme or parsley.
