  • 14.48 lb turkey
  • 2 cups soft bread cubes
  • 1/2 tsp chopped parsley
  • 2 tbsp melted butter or chicken fat
  • salt
  • pepper
  • poultry seasoning
  • water or broth
  • 3 tbsp finely diced celery
  • 1 tsp chopped onion
  • thin strips of salt pork

Method

14 steps
  1. Preheat oven to 500°F.
  2. Pat dry the thawed turkey with paper towels.
  3. Rub the turkey with salt and pepper all over.
  4. Loosely pack the prepared stuffing into the body cavity of the turkey, avoiding tight packing.
  5. Fasten the neck flap with a wooden skewer to close the cavity.
  6. Tuck the wings behind the back of the turkey.
  7. Wrap thin strips of salt pork around the turkey's thighs and cover the bird with them.
  8. Place the turkey in a roasting pan.
  9. Roast the turkey at 500°F for 15 minutes.
  10. Reduce oven temperature to 300°F.
  11. Roast the turkey, basting frequently with the pan juices, until the internal temperature reaches 170°F in the breast and 180°F in the thigh, and the stuffing reaches at least 165°F, checking with a digital thermometer.
  12. Check the internal temperatures periodically during roasting.
  13. Remove the turkey from the oven once the desired temperatures are reached.
  14. Let the turkey rest before carving.
