- 14.48 lb turkey
- 2 cups soft bread cubes
- 1/2 tsp chopped parsley
- 2 tbsp melted butter or chicken fat
- salt
- pepper
- poultry seasoning
- water or broth
- 3 tbsp finely diced celery
- 1 tsp chopped onion
- thin strips of salt pork
Method
- Preheat oven to 500°F.
- Pat dry the thawed turkey with paper towels.
- Rub the turkey with salt and pepper all over.
- Loosely pack the prepared stuffing into the body cavity of the turkey, avoiding tight packing.
- Fasten the neck flap with a wooden skewer to close the cavity.
- Tuck the wings behind the back of the turkey.
- Wrap thin strips of salt pork around the turkey's thighs and cover the bird with them.
- Place the turkey in a roasting pan.
- Roast the turkey at 500°F for 15 minutes.
- Reduce oven temperature to 300°F.
- Roast the turkey, basting frequently with the pan juices, until the internal temperature reaches 170°F in the breast and 180°F in the thigh, and the stuffing reaches at least 165°F, checking with a digital thermometer.
- Check the internal temperatures periodically during roasting.
- Remove the turkey from the oven once the desired temperatures are reached.
- Let the turkey rest before carving.
