Method
- Preheat the oven to 400°C.
- Wash approximately 30 small potatoes and cut them in half.
- Add a good amount of olive oil and a tablespoon of mixed spices or salt & pepper to the potatoes.
- Toss the potatoes to coat evenly with oil and spices.
- Place the potatoes on two baking sheets lined with parchment paper, ensuring space for crispiness.
- Bake the potatoes for about 30 minutes until tender when pierced with a fork.
- Peel and cut a large carrot into cubes.
- Add the carrot to the same bowl with remaining oil and spices, then toss to coat.
- Bake the carrots for about 20 minutes until tender.
- Peel and chop a large yellow onion (or red onion).
- Add the onion to the bowl with oil and spices, then toss to coat.
- Place the onion on a baking dish and cover with foil.
- Bake the onion for about 20 minutes until tender when pierced with a fork.
- Wrap a head of garlic in foil with a little olive oil and bake for about 20 minutes until soft.
- Once roasted, squeeze the garlic out of its skin and mash it gently.
- Combine all roasted vegetables in a bowl.
- Serve as a side dish with grilled chicken or wings.
