  • For the pork neck:
  • 1.7 kg pork neck
  • Salt, to taste
  • Paprika powder, to taste
  • Ground white pepper, to taste
  • Italian herb mix, to taste
  • 1 tbsp mustard
  • 2 tbsp vegetable oil
  • For the filling:
  • 300 g bell peppers
  • 500 g sauerkraut
  • 2 potatoes
  • 100 g dried apricots
  • 2 tomatoes
  • 1 tbsp soy sauce
  • 2 tbsp ketchup
  • Garlic powder, to taste
  • Smoked paprika powder, to taste
  • For the avocado mayonnaise:
  • 3 small avocados
  • 2–3 tbsp lemon juice
  • 1 garlic clove
  • Salt and pepper, to taste
  • 1 tbsp sweet mustard
  • 50–70 ml vegetable oil

Method

10 steps
  1. Preheat the oven to 180 °C top/bottom heat.
  2. Cut the pork neck so that a large pocket for the filling is created. Rub the meat with salt, paprika powder, white pepper, Italian herbs, and mustard.
  3. Heat the vegetable oil in a large pan. Sear the pork neck on all sides until golden brown.
  4. Chop the bell peppers, potatoes, dried apricots, and tomatoes. Mix with sauerkraut, soy sauce, ketchup, garlic powder, and smoked paprika powder.
  5. Fill the vegetable mixture into the prepared pocket of the pork neck. Close the opening with kitchen twine or wooden skewers if needed.
  6. Place the stuffed pork neck in a baking dish and cover tightly with baking paper and then with aluminum foil.
  7. Cook in the preheated oven for about 1 hour 15 minutes. Then remove the cover and brown for another 15–30 minutes until the meat is tender and fully cooked.
  8. For the avocado mayonnaise, blend the flesh of the avocados with lemon juice, garlic, sweet mustard, salt, and pepper until smooth.
  9. Gradually work in the vegetable oil until a smooth and creamy consistency is achieved.
  10. Let the pork neck rest for 10 minutes before slicing. Slice and serve with the avocado mayonnaise.

Additional tips

  • Contains mustard and soy; commercially available soy sauce may also contain wheat and gluten. Work carefully when cutting and stuffing the meat. Ensure the pork neck is cooked through and check the core temperature at the thickest part.
