Whole recipe (16 servings): 2832 kcal
- 700 g pork sausage meat
- 1 onion, fry until soft
- 150 g fresh white bread crumbs
- rind and juice of 1 lemon
- chopped sage
- chopped parsley
- 1 egg
- 225 g raw cranberries
- 150 g sugar
- 1 teaspoon mixed spice
- fresh nutmeg
Method
10 steps- Fry an onion until soft.
- Mix the fried onion with 700 g pork sausage meat.
- Add 150 g fresh white bread crumbs, the rind and juice of a lemon, chopped sage, and chopped parsley.
- Work the mixture together until well combined.
- Divide the mixture into 16 portions.
- Shape each portion into a ball.
- Bake in the oven for 25 to 30 minutes until browned and cooked through.
- For cranberry sauce, roughly chop an orange and blend with 225 g raw cranberries until juices flow and sauce forms.
- Add 150 g sugar, 1 teaspoon mixed spice, and freshly grated nutmeg to the cranberry mixture.
- Process until the juices flow and the sauce becomes smooth.
