Method
- Cut the stew meat into about 1 1/2 inch pieces.
- Place the meat into a Ziploc bag with flour, salt, and pepper, then shake to coat.
- Heat a skillet with neutral oil and sear the coated meat in a single layer until browned.
- Add the seared meat to the slow cooker.
- Deglaze the skillet with red wine or beef stock, scraping up browned bits.
- Add chopped onion, carrot, celery, garlic, bay leaf, and paprika to the slow cooker.
- Pour in about 1 1/2 cups of beef stock or broth, adjusting if using red wine for deglazing.
- Cook on low for about 8 hours or on high for about 4 hours.
- Optional: stir in frozen peas and garnish with fresh parsley before serving.
- Serve with crusty bread.
