Ingredients

  • 2 lb stew meat or chuck roast, cut into 1 1/2 inch pieces
  • salt
  • pepper
  • flour
  • neutral oil
  • onion
  • carrot
  • celery
  • garlic
  • potato (optional)
  • bay leaf
  • paprika
  • beef stock or beef broth
  • red wine (optional, for deglazing)
  • frozen peas (optional, for finishing)
  • fresh parsley (for garnish)

Method

  1. Cut the stew meat into about 1 1/2 inch pieces.
  2. Place the meat into a Ziploc bag with flour, salt, and pepper, then shake to coat.
  3. Heat a skillet with neutral oil and sear the coated meat in a single layer until browned.
  4. Add the seared meat to the slow cooker.
  5. Deglaze the skillet with red wine or beef stock, scraping up browned bits.
  6. Add chopped onion, carrot, celery, garlic, bay leaf, and paprika to the slow cooker.
  7. Pour in about 1 1/2 cups of beef stock or broth, adjusting if using red wine for deglazing.
  8. Cook on low for about 8 hours or on high for about 4 hours.
  9. Optional: stir in frozen peas and garnish with fresh parsley before serving.
  10. Serve with crusty bread.
