- 1 1/2 cups bread crumbs or pieces of bread, dried out
- 1 large onion, chopped
- 1 cup celery, chopped
- 1/2 cup green bell pepper, chopped
- 2 cups chicken broth
- 1 tbsp rubbed sage
- 1 egg, lightly beaten
- 2 tbsp butter, for greasing the dish
- Salt, to taste
Method
- Make cornbread in the baking dish you will use for the dressing.
- Cut up onion, celery, and green bell pepper; sauté in a skillet with chicken broth until tender.
- Crumb the cornbread into chunks or bread crumbs, and place in a buttered baking dish.
- Add the sautéed vegetables and broth to the crumbled cornbread.
- Lightly beat one egg and add to the mixture to help bind it.
- Add sage and additional chicken broth, mixing well and tasting to adjust seasoning.
- Pour the mixture into the prepared baking dish, ensuring it is moist but not soaked.
- Bake in a 350°F oven for about 20 minutes, or until the top is set and starting to brown.
- During baking, spoon chicken broth over the top to keep it moist.
- Remove from oven and serve when moist inside and golden on top.
