- 1/4 cup / 60g Dijon Mustard
- 1/4 cup / 60g Honey
- 2.5 tbsp Olive Oil
- 1 tbsp Apple Cider Vinegar
- 2 cloves of Garlic, (very finely diced)
- 1/2 tsp Salt, (plus more to taste when serving)
- 1/4 tsp Black Pepper, (plus more to taste when serving)
- 12 Pork Sausages
- 1.6lb / 750g Baby Potatoes, (halved)
- 4 small White Onions, (quartered)
- 2 Apples, (sliced into thick wedges (see notes))
- 1 bulb of Fennel, (sliced (see notes))
- few sprigs of fresh Rosemary and Thyme
Method
5 steps- Heat the oven to 190°C (375°F). In a bowl, whisk together the Dijon mustard, honey, olive oil, cider vinegar, garlic, salt and black pepper.
- Put the sausages, halved baby potatoes, quartered onions and sliced fennel in a large roasting tray. Pour over the dressing, add the rosemary and thyme, and toss to coat.
- Roast for 15 minutes, until the sausages begin to brown. Carefully turn and toss everything so it is coated again, then roast for about 20 minutes more.
- Add the apple wedges and turn them gently through the tray juices. Roast for a final 10–15 minutes, until the sausages are cooked through, the potatoes are tender and the apples have softened. The honey can scorch, so keep the oven at the stated temperature.
- Taste and season with extra salt and pepper if needed. Serve hot, spooning the sticky tray juices over the sausages and vegetables.
Recipe notes
Helpful tips
- Cut the potatoes into similar-sized pieces so they cook evenly; larger potatoes may need extra time.
- Add the apples near the end so they soften but do not collapse.
- Do not raise the oven temperature: the honey in the dressing can burn.
- Check the thickest sausage is thoroughly cooked before serving.
Storage
Cool promptly and refrigerate leftovers in a covered container for up to 2 days. Reheat until piping hot.
