Method
- Preheat the oven to 160° Celsius.
- In a bowl, mix softened butter with light brown sugar until smooth and fluffy.
- Add eggs one at a time, mixing well after each addition.
- Stir in treacle, golden syrup, and vanilla extract until combined.
- In a saucepan over medium heat, add chopped dates and water, and let simmer.
- Mix flour into the butter mixture until fully incorporated.
- Add bicarbonate of soda to the softened dates mixture and stir until mixed.
- Fold the date mixture into the batter until combined.
- Pour the batter into a buttered baking dish.
- Bake in the oven for approximately 45 minutes, or until golden brown and set.
- In a pot, combine dark brown sugar, butter, golden syrup, and vanilla extract over heat to make the caramel sauce.
- Once the butter has melted and sugar dissolved, gradually add cream while mixing.
- Add salt to taste and let the sauce thicken.
- Serve the sticky toffee pudding warm with the caramel sauce drizzled on top and a scoop of ice cream.
