  • plenty of cold butter
  • Greek yogurt
  • milk
  • finely chopped fresh berries
  • strawberry jam
  • lemon juice
  • orange zest (optional, for scent)

Method

8 steps
  1. Preheat the oven and prepare a baking sheet with parchment paper.
  2. Make the biscuits by cutting cold butter into flour until crumbly, then folding in Greek yogurt loosened with milk until just combined. Do not overmix.
  3. Pat the dough into a thick layer and cut into rounds with a biscuit cutter. Place on the prepared baking sheet.
  4. Bake the biscuits at 425°F (220°C) for about 12-15 minutes until golden and flaky. Let cool slightly.
  5. While biscuits are baking, prepare the filling by folding finely chopped fresh berries into strawberry jam with a little lemon juice. Optionally, add a bit of orange zest for scent.
  6. Whip heavy cream with a little sugar and vanilla extract until soft peaks form to make vanilla whipped cream.
  7. Slice the biscuits horizontally to create layers. Fill with whipped cream and the strawberry filling, then stack the layers to build a tall shortcake.
  8. Serve immediately, garnished with additional berries or whipped cream if desired.
