- fresh parsley, finely chopped
- fresh rosemary, finely chopped
- fresh thyme, finely chopped
- Italian sausage
- butter
- extra virgin olive oil
- salt
- wine or light beer (optional)
- eggs
- chicken stock
Method
- Let the bread get stale overnight or dry it out in a low oven.
- Chop onions, leaks (optional), and celery; set aside.
- Chop herbs (parsley, rosemary, thyme) finely; set aside.
- Brown Italian sausage in a skillet until crispy; remove and leave drippings.
- Add butter and olive oil to the skillet; melt.
- Cook celery and onions with a pinch of salt for 10 to 15 minutes over medium heat until soft.
- Add cooked sausage to the skillet; cook a few minutes.
- Deglaze with wine or light beer; let reduce.
- Remove skillet from heat and let cool slightly.
- Add sautéed mixture to torn bread.
- Whisk eggs and chicken stock together; add to bread mixture.
- Mix well; it will look wet but will soak up during baking.
- Transfer mixture to a greased casserole dish.
- Preheat oven to 350°F.
- Cover and bake for 30 minutes, then uncover and bake for another 30 minutes.
