  • stale bread, torn or diced
  • onions, diced
  • leaks, chopped (optional)
  • celery, chopped
  • fresh parsley, finely chopped
  • fresh rosemary, finely chopped
  • fresh thyme, finely chopped
  • Italian sausage
  • butter
  • extra virgin olive oil
  • salt
  • wine or light beer (optional)
  • eggs
  • chicken stock

Method

15 steps
  1. Let the bread get stale overnight or dry it out in a low oven.
  2. Chop onions, leaks (optional), and celery; set aside.
  3. Chop herbs (parsley, rosemary, thyme) finely; set aside.
  4. Brown Italian sausage in a skillet until crispy; remove and leave drippings.
  5. Add butter and olive oil to the skillet; melt.
  6. Cook celery and onions with a pinch of salt for 10 to 15 minutes over medium heat until soft.
  7. Add cooked sausage to the skillet; cook a few minutes.
  8. Deglaze with wine or light beer; let reduce.
  9. Remove skillet from heat and let cool slightly.
  10. Add sautéed mixture to torn bread.
  11. Whisk eggs and chicken stock together; add to bread mixture.
  12. Mix well; it will look wet but will soak up during baking.
  13. Transfer mixture to a greased casserole dish.
  14. Preheat oven to 350°F.
  15. Cover and bake for 30 minutes, then uncover and bake for another 30 minutes.
