Method

13 steps
  1. Season the diced chicken.
  2. Mix the flour, baking powder, cornstarch and water into a batter.
  3. Rest the batter for about 5 minutes.
  4. Heat the frying oil.
  5. Coat and fry the chicken in batches until golden and fully cooked.
  6. Drain the fried chicken.
  7. Mix the apple cider vinegar, honey and ketchup for the sauce.
  8. Sauté the onion and garlic.
  9. Add the carrots and red and green peppers and cook for a couple of minutes.
  10. Add the sweet-and-sour sauce and cook for about 3 minutes.
  11. Add the diced pineapple.
  12. Add the fried chicken and cook for another 2 minutes.
  13. Serve immediately.
