Method
- Season the diced chicken.
- Mix the flour, baking powder, cornstarch and water into a batter.
- Rest the batter for about 5 minutes.
- Heat the frying oil.
- Coat and fry the chicken in batches until golden and fully cooked.
- Drain the fried chicken.
- Mix the apple cider vinegar, honey and ketchup for the sauce.
- Sauté the onion and garlic.
- Add the carrots and red and green peppers and cook for a couple of minutes.
- Add the sweet-and-sour sauce and cook for about 3 minutes.
- Add the diced pineapple.
- Add the fried chicken and cook for another 2 minutes.
- Serve immediately.
