Ingredients

  • 1 chili, half seeds removed
  • 1 tbsp tamarind paste
  • 1 tsp palm sugar
  • zest and juice of 1 lime
  • handful toasted peanuts
  • 1 pineapple, peeled and chopped
  • 1 apple, diced
  • 1 pear, diced
  • 1/2 cucumber, deseeded and chopped
  • 1 mango, sliced

Method

9 steps
  1. Rub and finely chop the chili, removing half the seeds.
  2. Mix tamarind paste, palm sugar, lime zest, and lime juice to make dressing.
  3. Dry roast peanuts with a pinch of salt until dark brown.
  4. Crush the roasted peanuts using a cloth and rolling pin.
  5. Peel and chop pineapple into chunks.
  6. Dice apple and pear.
  7. Deseed and chop cucumber.
  8. Slice mango.
  9. Drizzle dressing over the fruit and toss gently to coat.
