Ingredients
- 1 chili, half seeds removed
- 1 tbsp tamarind paste
- 1 tsp palm sugar
- zest and juice of 1 lime
- handful toasted peanuts
- 1 pineapple, peeled and chopped
- 1 apple, diced
- 1 pear, diced
- 1/2 cucumber, deseeded and chopped
- 1 mango, sliced
Method
- Rub and finely chop the chili, removing half the seeds.
- Mix tamarind paste, palm sugar, lime zest, and lime juice to make dressing.
- Dry roast peanuts with a pinch of salt until dark brown.
- Crush the roasted peanuts using a cloth and rolling pin.
- Peel and chop pineapple into chunks.
- Dice apple and pear.
- Deseed and chop cucumber.
- Slice mango.
- Drizzle dressing over the fruit and toss gently to coat.
