- turkey mince
- spring onions
- red pepper
- light coconut milk
- red Thai curry paste
- peanut butter

Method
- Mix turkey mince with ingredients to make the meatballs.
- Shape the mixture into small golf ball-sized meatballs.
- Cook the meatballs until they develop some colour, about 80% done, in a pan, oven, or air fryer.
- Chop spring onions and red pepper.
- Fry the spring onions and red pepper in a pan.
- Add light coconut milk, Thai curry paste, and peanut butter to the pan.
- Return the meatballs to the pan, reduce heat, and simmer for about 10 minutes until the sauce thickens and meatballs are fully cooked.
- Serve with rice.
