Ingredients

  • turkey mince
  • spring onions
  • red pepper
  • light coconut milk
  • red Thai curry paste
  • peanut butter

Method

  1. Mix turkey mince with ingredients to make the meatballs.
  2. Shape the mixture into small golf ball-sized meatballs.
  3. Cook the meatballs until they develop some colour, about 80% done, in a pan, oven, or air fryer.
  4. Chop spring onions and red pepper.
  5. Fry the spring onions and red pepper in a pan.
  6. Add light coconut milk, Thai curry paste, and peanut butter to the pan.
  7. Return the meatballs to the pan, reduce heat, and simmer for about 10 minutes until the sauce thickens and meatballs are fully cooked.
  8. Serve with rice.

  • Shape the meatballs evenly so they cook consistently.
  • Brown the meatballs before finishing them in the sauce.
  • Simmer gently after adding the coconut milk and peanut butter.
