- 3 eggs
- 100g green onion
- 1 tbsp unsalted butter
- 1 tomato
- salt
- black pepper
- crushed red pepper
- mozzarella cheese
Method
- Chop green onion.
- Slice tomato.
- Beat eggs with salt, black pepper, and crushed red pepper.
- Add green onion to eggs and mix well.
- Heat butter in pan over medium-low heat.
- Place tomato slices in pan.
- Pour egg mixture over tomato slices.
- Sprinkle mozzarella cheese on top.
- Fry for 3-5 minutes until cooked.
