Lemon Cake

Ingredients

• Zest of 2 lemons
• Juice of 2 lemons
• 2 eggs
• 130 g sugar
• 4 tbsp cornstarch
• 300 ml milk
• 6 eggs
• A pinch of salt
• 7 tbsp sugar
• 160 g flour
• 120 g butter
• Powdered sugar
• Coconut flour

Method

1. Grate the zest of 2 lemons and squeeze the juice.
2. Mix 2 eggs with 130 g of sugar.
3. Add 4 tbsp of cornstarch and 300 ml of milk, mix well.
4. In another bowl, beat 6 eggs with a pinch of salt and 7 tbsp of sugar.
5. Incorporate 160 g of flour and 120 g of melted butter into the egg and sugar mixture.
6. Combine the lemon mixture with the flour and butter mixture, gently mix.
7. Pour the batter into a greased and floured baking pan.
8. Bake in a preheated oven until golden.
9. Let cool and dust with powdered sugar and coconut flour before serving.
