- 1.2 kg potatoes
- 40 g butter or olive oil
- salt
- 2 leeks
- 100 g spinach
- 100 g feta
- salt and pepper
- parsley or dill
- 5 eggs
- 100 g Greek yogurt
- 100 g Parmesan cheese
- 1 teaspoon paprika (optional)
Method
- Peel and boil the potatoes, then mash them to create a soft base.
- Prepare a light filling by chopping the leeks and lightly cooking them.
- Add the chopped spinach and crumbled feta to the filling.
- In a bowl, whisk the eggs with the yogurt, Parmesan, paprika, salt, and pepper.
- Mix the spinach and feta filling into the beaten eggs.
- Spread the potatoes in a baking dish, pour the filling over, and level it.
- Bake in a preheated oven at 180°C for about 25-35 minutes, until golden.
- Let rest a few minutes before cutting and serving.
