  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 15oz can pure pumpkin
  • 1/4 cup vegetable or coconut oil
  • 1 cup oat milk
  • 1/4 cup brown sugar
  • 3/4 cup white sugar

Method

9 steps
  1. Combine all-purpose flour, baking soda, baking powder, cinnamon, nutmeg, pumpkin pie spice, and salt in a large mixing bowl.
  2. In a separate bowl, mix the pure pumpkin, vegetable or coconut oil, oat milk, brown sugar, and white sugar until well combined.
  3. Pour the wet ingredients into the dry ingredients and mix for no more than 20 to 30 seconds until just combined.
  4. Preheat oven to 350°F (175°C).
  5. Line muffin pan with cupcake liners or spray with non-stick spray.
  6. Fill the muffin liners all the way to the top with batter.
  7. Bake at 350°F (175°C) for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Remove muffins from oven and transfer to a cooling rack.
  9. Allow to cool completely before storing.
